I got a great little recipe and product for you. The nice people from Laura’s Lean Beef contacted me a while ago about their product. They sent me some vouchers and I went out and got some of their 8% lean ground beef.

We made these beef empanadas — one of the recipes on their website. They turned out great and were really kid-friendly. The kids dipped them in the guacamole and I served them with black beans. But before I reveal the giveaway, a little more about Laura’s Lean Beef…

In 1985 Laura Freeman, a seventh-generation cattle farmer, took over her family’s business. She started experimenting with lean, gourmet breeds of cattle including Limousin and Charolais — and made the decision not to use antibiotics or hormones at a time it was acceptable to do so.

Today, Laura’s Lean Beef is available in 7000 stores throughout 47 states. Her meat is free of antibiotics and added hormones and all cattle live in pastures and graze on natural grasses and grains. All of their farmers follow strict standards for raising and treating cattle.

Laura’s Lean Beef has been awarded the Good Housekeeping Seal and 5 of its products are certified by the American Heart Association. Check out their site for more information.

Products

Lean Ground Beef — 92% Lean Ground Beef/96% Lean Ground Round/96% Lean Ground Sirloin groundbeef_thumb[1]

Steaks and Roasts — Eye of Round/Flank Steak/Ribeye Steak/Sirloin Steak/Strip Steak/Tenderloin Filet/Top Round llb-steak-thumb[1]

Cooked entrees — Beef Pot Roast Au Jus 3 oz. (85g)/Meatloaf w/ Tomato Sauce 5oz. (140g)/Shredded Beef w/ BBQ Sauce 5 oz. (140g) Meatloaf[1]

This lean beef is easy to get (at major grocery stores) and is just as lean as ground turkey. I plan to try more products and post more recipes! The nice people at Laura’s Lean beef are offering 3 $20 vouchers. So for this giveaway, there will be 3 lucky winners.

We’re really trying to focus on eating food that is not only healthier for us, but also the environment. This would be a great way to add a ‘next step’ to that plan!

I would love to win a Laura’s Lean Beef voucher because (1) my family is in the process of switching to organic, hormone-free, antibiotic-free animal products and (2) we are trying to save $ everywhere we can (which is not always easy when trying to eat healthy & safe foods). This will definitely help us along the path to healthy (& less costly) eating.

I would like to win it because I was a beef eater throughout my childhood. My first burger on the college campus was awful and stopped me cold in my tracks for years. I now eat beef again and when I do, I want it to be good, not junk, beef. This is good beef!

I would like to win because I refuse to buy “normal” ground beef at the grocery store after learning that the USDA has approved ammonia treated “pink slime” to be a part of an increasing amount of our ground beef supplies in the this country. Laura’s Beef Products are normally just too expensive for my budget so right now I just buy ground turkey.

The reason I would love to win one of these vouchers, is because we are a family of four living off one income, however most of our income is spent on organic and natural whole foods (paleo). There is no other way to eat and it is important to have these foods to teach my children the healthy way to eat. Anyways, we live paycheck to paycheck (penny to every last penny) and meat is often the most expensive part of our budget.

Another random fact, I live in such a small town that only ONE store carries Laura’s beef – a local kroger. I try hard to hoard it whenever it is available 😉

Laura’s beef is factory farmed. I wish people would take the time to visit the farms and see what these animals eat. They do not eat any grass. They are fed GMO corn which is bought from the large processors the other factory farms use. The only difference in Laura’s beef is that poop is cleaned out more often and harsher sanitiziers are used to spray the entire area down so that antibiotics don’t need to be given to the animals in their food (which I repeat is GMO CORN).
