Dinner Rotation: February-March

We are moving right into Spring! One change to my dinner rotation is “No Meat Fridays” because we are Catholic and observe Lent. This thrills me as I love vegetarian meals and my husband has to be supportive.

Last Friday, we tried something I’ve been wanting to do for a while: salad bar night. Little D had been home sick and I wanted to clean out the fridge and not cook. So I just put out various salad items like lettuce and spinach, carrots, cranberries, nuts, croutons, pasta, apple slice, beans (not pictured) and homemade ranch and blue cheese salad dressing. I finally caved and bought blue cheese dressing because A) my husband likes it and B) Big A has taken a keen interest. For premixed salads on regular dinner nights, I prefer vinaigrette but when I do it salad bar style, I like creamy dressings like ranch. I also served it alongside some white bean banana bread.     This looks great! And I am with you on the creamier dressings for salad bars 🙂 When I was growing up, we always has “family work day” on the farm. It always sounded so fun when I was younger and actually ended up loving being outside and working with the fam all day! Then, we would come back inside in the evening and sit down to a nice meal together 🙂

    Hi Maryann,

    Thank you so much for the dinner rotations. Whenever I’m in a rut, I pull up your most recent email.

    We have chores too. Unloading the dishwasher, picking up their own messes (shoes, toys, etc.) and feeding the cat. Sometimes they grumble, but they always end up doing it. If things have not been done by dinner time, I remind them that I am cooking dinner for the family. They can do is XYZ to help the family. Trying to take a team approach and adding on as they get older. Maybe one day they will cook me dinner 🙂
