Easy Spinach Pancakes [Recipe]

I woke up on St. Patrick’s Day wanting to make something green for breakfast. So I searched Super Healthy Kids’ site and found this recipe for No-Dye Green Pancakes. I used my Blendtec to blend the spinach, yogurt, and other wet ingredients, mixing it with flour. The kids really went for these. But what surprised me most was that Big A was super enthused.

You see, I have two very different eaters. Big A eats — and tries — more foods than Little D but she is particular about certain items, like pancakes. Little D, on the other hand, has fewer foods in his repertoire but isn’t choosey about the food he already accepts, like pancakes (unless it has big chunks of stuff in it!).

So I recently made these again and was reminded how good they are. Oh, and in case you were wondering, my kids see all the ingredients go in. No hiding.

Easy Spinach Pancakes

Serves: 4
Ingredients
  • 3 cups spinach
  • 2 eggs
  • 1 Tbsp butter, melted
  • 1 tsp vanilla
  • 2 Tbsp honey
  • ½ cup yogurt
  • ¼ cup milk
  • 1½ cup flour
  • 1½ baking powder
  • ½ tsp salt
Instructions
  1. Blend wet ingredients together until very smooth.
  2. In a bowl, add dry ingredients and set aside.
  3. Mix together wet and dry ingredients. Add more milk for desired consistency.

    Hi, im sorry but this bothers me a lot…maybe this is healthier than junk food but this is not healthy!! Eggs, milk, butter and yogurt are not healthy unless completely organic/from grass fed animals, and spinach pancakes do not need all those to be great! Flour is actually unhealthy unless its rice, buckwheat or at least whole wheat..i do not want to argue or anything i just get upset when people dont know how to eat healthy and convince themselves otherwise.

      Hi Maria. Thanks for your comment. Can you provide evidences that eggs, milk, butter and yogurt are not healthy unless from grass-fed animals? My point is that if you are going to make strong claims like these, please provide substantiation. People always have the option to use organic, grass-fed or different types of flour to meet their preferences and budget.

    does it matter if I use fresh or frozen spinach. In the spring and summer we grow our own but in colder months we buy frozen.
