Roasted Vegetables: Sweet Potato & Zucchini [Recipe]

Ingredients
  • 2 zucchini, sliced
  • 1 large sweet potato, peeled and chopped
  • 1 small or ½ large onion, cut into fourths and sliced
  • 1 red bell pepper, cut into strips
  • ¼ cup olive oil
  • 1 Tbsp. fresh rosemary chopped or 1 tsp dried
  • ¼ to ½ tsp. salt
  • ¼ tsp. pepper
Instructions
  1. Preheat oven to 400 F.
  2. Prepare the vegetables and place in a medium bowl.
  3. Add oil, rosemary, salt and pepper to the veggies and mix well.
  4. Place on a large roasting pan and cook for about 30 minutes or until tender and lightly browned.
  5. Add more salt and pepper to taste.
