Homemade Blueberry Waffles [Recipe]

Serves: 4-6
  • 1 cup frozen blueberries, thawed
  • 1 cup quick cooking oats
  • 1 cup whole wheat flour
  • 2 tsp baking powder
  • 2 eggs
  • 2 Tbsp. melted butter
  • 1½ cup milk
  • ½ tsp salt
  • 1 Tbsp. maple syrup
  1. Mix oats, flour, baking powder and salt in a medium bowl.
  2. Blend blueberries, eggs, butter and maple syrup until pureed. Add wet ingredients to dry ingredients and whisk in the milk. Let sit at least 10 minutes before cooking.
  3. Cook as you normally would with a waffle iron.
