Oat Pancakes [Recipe]

Pancakes with syrup, blueberries and bananas

This recipe for oat pancakes was submitted by Charlotte, a busy mom in France. She got this recipe from one of her mom friends and it has become one of her family favorites. It’s a nutritious twist on the traditional pancakes that most kids (and moms) love.

My daughter likes them plain or with just a little honey drizzled on top. Of course, you can use syrup too!

Oat Pancakes [Recipe]

Serves: 4-6
Ingredients
  • 4 egg whites
  • ½ cup Quick Cook Oats (not instant)
  • ¾ cup cottage cheese
  • 1 tsp vanilla extract
  • 1 tsp cinnamon
Instructions
  1. Place the ingredients in a blender and blend until smooth.
  2. If the batter is too thick, you can add just a little water to thin it out.
  3. Cook them in a pan just like regular pancakes - about a minute per side.
