Weekly Meal Plan and Kettle Brand Chips Giveaway

I’m really excited for 2013! Fearless Feeding, the book I’ve co-written with Jill Castle, is due out this April. Our website is up and running and we are planning some fun stuff leading up to the launch, including some cool giveaways that will increase in value as it gets closer.

But before I get into today’s giveaway, I want to share this week’s meal plan. Big A suddenly loves taquitos, especially the black been and cheese ones from Trader Joes. I thought it would be fun to try and make them myself so I’m trying this recipe from the Weelicious book. The Black Bean Chili is also really easy — I make it ahead of time in a pot and switch it to the slow cooker for a few hours.

Monday: Chicken Taquitos with guacamole and black beans

Tuesday: Slow Cooker Veggie Lasagna

Wednesday: Kids’ Choice

Thursday: Panko Crusted Salmon with roasted butternut squash, asparagus and fruit

Friday: Black Bean Chili with cheesy bread

I’m also going to be trying this homemade pasta sauce one day this week. I’ve tried others and have always been disappointed so I hope it works out.

Kettle Brand Bakes Potato Chips

I was lucky enough to receive product from Kettle Brand’s Bakes Potato Chip line. We are not frequent chip consumers, but we do put them out when people come over and have them with lunch sometimes. My children do flock to chips at parties though.

These chips are baked, not fried and use only whole-food ingredients. For example, their regular Sea Salt Bakes ingredient line is potatoes, safflower and/or sunflower oil, sea salt. According to their site they “take real potatoes. Slice them. Season them with fresh, all-natural ingredients. And then bake them to crunchy perfection. ” They contain 65 percent less fat than regular chips, 2 grams of fiber, 3 grams of fat, 115mg sodium and only 120 calories per serving (about 20 chips).

So I put these chips to the ultimate test and had them out when family came over, including my mother-in-law who is pretty selective about food. Not only did she like them, so did the kids and everyone else (including some very manly men). They are crispy and taste really good….dare I say, like real potatoes.

I asked Kettle Brand Chips to send one of my readers some product and they agreed. This giveaway is a kick off to Fearless Feeding website — and countdown to the book launch. The package includes all five Kettle Brand Bakes flavors:

One winner will be chosen using random.org. The winners will be announced on Raise Healthy Eater’s Facebook Page. This giveaway ends next Monday, January 14th, at midnight.

    The chicken taquitos recipe sounds yummy, I’ve never thought to try baking taquitos. Maryann I noticed you mentioned that Big A likes black beans- my kids do as well- do you plan on putting the beans in the taquitos, or on the side?

    I’d like to win because on a tight food budget, snacks can be a sometimes luxury and while I’d love to try those tomato cheddar chips, trying new things doesn’t really fit in with a tight food budget. Give me a chance to love them!
